Raw cashews are one of the better nuts you can eat. Buy the unsalted, raw ones. They tend to be higher in fat than other nuts but it's a healthy fat, and they are loaded with a ton of amino acids and minerals.
Cashew Cream cheese.
For anyone with issues digesting dairy, or following a vegan diet...or even if you just want to try something new in your diet... I urge you to try cashew cream cheese. The simplest way I can tell you to make it is below:
1 c. of Raw Cashews -> soak in water in your fridge overnight
Drain the water, rinse the cashews and dump in a blender.
Add a little fresh water, and a pinch of lemon juice (Fresh!)
THEN add your flavour.
I love Sundried Tomatos, Garlic, S&P but a second fav is Ginger, Soy and Garlic. Yum.
The best part is ZERO preservatives and you know what each ingredient is. Why not try it out this weekend?
Google it up - I've heard a rumour there is a cashew cream cheese spinach dip out there!
